What is Santa Fe Tea Kombucha?
The Santa Fe Tea Company brews raw, organic, and locally produced Kombucha. Our Kombucha is brewed using a large, flat, pancake shaped “mushroom.” Technically, the Kombucha is not a mushroom, nor is it purely a fungus. It is part lichen, part Bacterium xylinum, and part natural yeast culture.
Using the process of fermentation, a complex biochemical transformation takes place over a 9 to 12 day period, resulting in a sparkling cider like liquid that is extremely nourishing. |

Kombucha contains substances that promote health and longevity:
· Live Enzymes (chemical catalysts) are crucial for proper digestion, absorption of vital nutrients, and many other functions of the body. · Glucoronic Acid is made in large amounts by a healthy liver. Its function is to detoxify the body. · Hyaloronic Acid is a key component of connective tissue. Hyaluronic acid binds water, forming a gel-like substance which hold cells together. · Chondroitin Sulfate acid is a basic component of cartilage, bone, and blood vessels. · Heparin is a polysacchaide, also produced by the liver and used as an anticoagulen in the treament and provention of thombosis (blood clots). · Acentic acid helps to establish an optimum pH balance. · Tannic acid is antiviral and antibacterial. · Lactic Acid is a key component of the tea. It is a ferment of the friendly bacteria lactobacillus acidophilus. Lactic acid increases oxygen in the blood, and is a key reason that an increase in energy is almost immediately noticed after drinking the Santa Fe Tea Company’s Kombucha. · Usnic Acid is a substance with strong antibacterial and antiviral properties. · Folic Acid assists in forming body proteins, genetic material, and the formation of hemoglobin. It is a vitamin essential to the production of red blood cells by the bone marrow. · Fission yeast are the yeast enzymes in the tea that respond to the living micro-organisms in the body and fight against troublesome yeast infections.
